Costa Maya is a Mexico Tourism town, built by the government after a devasting hurricane in 2007 to help these poor folks out of poverty. On the dock is a beautiful, huge swimming pool, which I might do another time, surrounded by shops, double the price of out of this village. Our tour left at 8:05am from the pier. An hour bus ride with a great guide. I learned so much about Mayan history and beliefs. In Belize the guide wanted to talk more about slavery and British colonialism (it's formerly British Honduras). Most of the Belezians were black, with West Indian lilting voices, here they were all Mayan, short foreheads large noses. NO need to speak Spanish here, everyone spoke excellent English. Many still speak the Mayan dialect, also used in Apocolypto, with subtitles. So ... read more

Mayan Dinner Last night’s dinner was once again just over the top. Miguel clearly enjoys what he is doing and puts heart and passion in to all of his meals. We went with the Mayan Dinner, because of the Cochinita Phibil; it was so good the night before we just had to have more. The great thing about getting to know Miguel so well was that even though we order items off the preset menu, every meal always had a special item that Miguel added for us. Last night was no different. Dinner started with Chicken Tortilla Soup (Charles would have loved it) with a twist. The twist was there were no tortillas, instead it was either thinly sliced jicama or potatoes, we could not really tell which. The broth itself was excellent, subtle hints of ... read more

A Note on American Tourists When Jerry and I travel we do everything we can to not only learn the customs, traditions and history of our host country, but we also go out of our way to be repectful of the locals and other travelers. I previously mentioned that there was a wedding party staying in the unit next to us. Friday night they had there rehearsal dinner. As a result, to make it easier on Miguel we opted to have what ever they were having for our dinner. (I will get to what we had later as that is not the point of this entry). The point is, Miguel spent all day cooking for this rehearsal dinner with an anticipated start time of 6 pm. He grilled several different meats, and in order for it ... read more

We really can't say enough about the food. I think I may have missed a couple of meals so just to get you all up to speed. Thursday Breakfast Breakfast consisted of Chilaquiles (fried totrilla chips topped with shredded chicken, tomato sauce cheese and fresh cream) You would have bet there were eggs, from the texture and even taste, but no. As always breakfast comes with fresh squeezed OJ, coffee, potatoes with Chorizo, fresh fruit and a basket of Mexican sweet breads. It all tasted wonderful, the only small improvement would be that the chicken was a little dry. And the potatoes are always undercooked, but tasty. Happy Hour Since it was Jerry's birthday we added a happy hour course to our meals. It was in fact free since we bought travel insurance (we never buy ... read more

THE FOOD Last nights dinner was incredible, what I thought was a light dinner, turned out to be one of the best things we have eaten so far. It was entitled "The Appetizer Dinner" We got to choose 4 things from a list of about 8. I had choosen, peel & eat shrimp, conch fritters, shrimp poppers, and ceviche. I don't even know where to start. Peel & Eat Shrimp It wasn't so much the shrimp, I mean after all its boiled shrimp, but the cocktail sauce, we have never had anything like it. It had the perfect amount of horseradish sauce, but also had sometype of chili in it. It was truly the best ever. Conch Fritters This was Jerry's first time ever eating Conch, so he had nothing to compare it too. I however, ... read more

You simply could not ask for better weather. High clouds but mostly nothing but sun and hot hot hot. We both spent most of the day working, me on taxes Jerry on finishing up a few last school projects. We had a nice chat with Miguel. It turns out the secret to the cocktail sauce was wasabi and something called Maggie's sauce (is this something your bottleing Mag?) The second sauce was sauted dried chipolte, then added to tomato sauce. We are no longer alone as the the villa on either side of us have been rented for the weekend. But you really don't know they are there, unless your at the pool, which I have not been at much since I am a little red from too much sun yesterday. Miguel was worried I was ... read more

AND THEN IT RAINED I ended with dinner our first night, we are now on our third night, so let me catch you up a bit. Remember, this is a very different vacation for us, so this blog is mainly about food and sum other miscellaneous stuff. First Full Day The day started with a breakfast of the best Huevos Rancheros I have ever had. The sauce was a combination mole/black bean and the eggs were cooked perfectly, even after being in the oven for 20 minutes to keep things warm while Jerry woke up. The stove is propane and even though we are not cooking, until Sunday breakfast, we do use it to keep things warm. I have never cooked or used propane other than a Coleman for camping (yes I have been camping). It ... read more

Dinner Our first dinner was entitled "The Welcome Dinner" consisting of what the average American would consider Mexican food. We had chicken enchiladas with both rojo and verde sauce (red and green for you gringos), chicken flatus, beef fijitas, spanish rice, black beans, fried plantains, hand made tortillas ending with flan for dessert. The food tasted fantastic, the only minor issue was the tempature of the food. Since it is made off-site (actually just a few buildings away) and then delievered it can be luke warm. But there is an oven, so that is easily fixed. Dinner also came with a pitcher of margaritas. After dinner we relaxed I of course took a evening dip in the pool and true to tropical vacations we were asleep by 9:30 with the crashing of the Carribean lulling ... read more

So we are here in our Boat Villa, after a long night of travel. The vacation actually started Sunday at 4:00 pm with a celebration at Hobo's for Jerry being done with school. After that we had an evening of over the top pageantry at Le Femme Magnifique International. An annual drag competition put on by Darcelle XV and company a good time was had by all. After the pageant Jerry and I left for the airport. Our flight was delayed by 30 minutes so we left at 1:00 am. We transferred planes in Houston and ended up arriving 15 minutes ahead of schedule. Took an hour to get through customs and immigration, but then the car picked us up and took us to paradise. I would like to show pictures, but we forgot to pack ... read more

Benous Diaz!!! After 10 days we leave Mexico to head back to the grand US of A. I am so keen to get back to the USA, there are so many things I have missed about it already, not that I didn’t have a good time in Cancun/Playa Del Carmen, there were just a few issues that really stressed us out. First of all the plumbing; I am not sure how appropriate it might be to share these stories but the plumbing in both of our ‘5 star’ hotels was shocking. On one occasion the toilet began to overflow with diluted urine (will not mention names, but it was not me) and actually reached the bedroom floors. Melissa’s solution was to simply close the toilet lid…. Who is a dumb bitch? And Kelle’s aka Keller or ... read more
