So, perhaps the coolest part about ECCo is that we get cooking lessons from this ridiculously amazing woman. If i had enough money i would take lessons from her for the rest of the semester. 2 weeks ago we had our cooking "presentation" with her. Which basically means that we assumed meant she might show us how to make cookies and that would be the end of it. however, silly us, it meant that she was showing us how to cook like a four course meal. polenta with ragu, some tomato beef stew thing with peas that was excellent, tiramisu and biscotti, etc. it was fabulous. rita= goddess.
last week started our actual cooking lessons. we made two desserts--a raisin muffin thing and a to-die-for apple cake. i need to learn how to make that cake, i died pretty much when it was in my mouth. of course, i was not part of the group that made it but the directions seem simple enough. We made 2 types of pasta with ridiculously easy sauces, one with ricotta and the other with blended tomatoes. they were good, but i dont think i liked them as much as everyone else did. we also made veal wrapped around proscuitto and american cheese---excellent, and cheesy mashed potatoes--also excellent. but by far the best thin was the apple cake. absolutely fabulous.

Now I want to take cooking lessons
Wouldn't it be fabulous to have someone teach you how to cook like that for a whole semester -- does she do stuff like that? love you
