We decided two things when we first arrived in Belize, 1 - no complaining, and 2 - no list making. Being business owners and living in a small town, we find that our lives generally revolve around lists. Lists of things to do for work. Lists of things to buy in town. Lists of things to not forget - we are starting to get to that age after all. Sometimes I go downstairs to get something and by time I'm down there I've completely forgotten what it was. Yes, we are getting older indeed. As for complaining, I think that comes to us all honestly but even more from my side since I am related to Carol after all! Subsequently, I am not allowed to complain that we had only barely warm, not hot, water which ... read more

There doesn't seem to be any rhyme or reason as to when the fishing boats come in with the fresh fish. Somehow I thought fish would be plentiful and readily available; however, fresh fish has been turning out to be more than elusive unless we get it already prepared at a restaurant. It's not carried in any of the markets so almost every day, we go by the dock, there's a small co-op building on the side of the sidewalk and we ask, "Any fish today?" The heavy set woman, who is not all that friendly, sitting out on the deck with an open empty freezer behind her tells us how the boat was there this morning before they opened, or how they had everything at 5 pm two days ago, but never anything while we ... read more

I had seen it on Discovery Channel or Anthony Bourdain on CNN, maybe it was Food Network, not sure exactly sure where, but I was reminded when we see it displayed on one of the menus outside a restaurant in town that you can actually eat Gibnut in Belize, which is rat - no kidding. There is a lot of discussion going on about it between Ian and I, no doubt we could order it but could we actually put it in our mouths and swallow it? Could you? Should this be something on our list to do while we are here? Hmmm?? We think back to when we first tried raw oysters, scary looking and slimy, which we now love, or frogs legs, that tasted like chicken. Even artichokes with their furry center needing to ... read more

Woke up to a bright sunny morning for a change, sun shining, birds chirping. It has mostly been cloudy with only a few breaks during our first week. That was ok because we were so white that it gives us a chance to ease into the change from winter weather to warmer weather. It's also nice because the construction workers next door are taking the day off so we take the opportunity to sit by the pool while it's quiet. The sun is super hot, we need to get into the pool every few minutes just to bear it. We were a little disappointed about the noise from the construction next door, when we first got here we emailed the people who rented us the condo and sent a pretty strong complaint email about it, they ... read more

It is a rainy Saturday but we have to head into town anyway to finally get some groceries for our condo, we can't eat in restaurants the whole month! Our main goal is hunting down the ingredients for tacos for dinner since I brought some taco seasoning mix with me from home and a few other staples. We are walking and Ian has a backpack so we don't want to make it too heavy. First stop is the largest Supermarket right at the edge of town, the furthest away, around 1.5 miles walk. We were fairly impressed with the place, by far the largest and also very clean. Everything local is cheap, cheaper than home. Things imported, that's another story, a smaller size bag of Dorito's - yes that's right $12.95 BZ. I guess we won't ... read more

We are spending most of our time either relaxing and reading or meandering around the village and eating our way through town at the various restaurants. So far we have eaten out for every meal except breakfast - this is such a treat since it's something we can't ever do at home. We'd run out of places to go in Balfour after a single day. The restaurants have been really wonderful, cheap in comparison to home or the States. Belizian money is $2 to every $1 US. Portion sizes are reasonable unlike the States where the meals tend to be massive. We've been living on mostly fish and chicken, in fact, I have only seen steak on one menu so far and it was seriously expensive in comparison to other items. The side dishes are mostly ... read more

It's about10 minutes to walk to downtown Placencia from our condo. The road on the way is not paved as most are not, they're red iron oxide dirt, a few potholes from the recent rain mean its a good idea to watch where we step. We walk along the canal, the ocean is just on the other side of a row of homes, there's a nice one for sale with an extra rental house and a couple of lots - we stop and chat with the owner. Most houses here are built on stilts, the main floor is open below with living quarters up on the second floor. We turn right at a small school which is made up of several little buildings housing classrooms instead of one large building like what we're used to. The ... read more

Saturday 14th Jan - Placencia, Belize A barnstorming day of weather again in the region of 30 degrees and it felt like an opportune moment to do a spot of sunbathing. Unfortunately we'd brought along a bottle of out of date suncream with us from a well meaning but probably forgetful family member who'd forgotten that the cream donated had been sat at the back of the cupboard for the past 20 years or so. Now you might think its hard to purchase suncream in latin america, however it isn't in the big cities but as we regretfully found out it is in sleepy beach resorts. Placencia is an amazing place with a really nice laid back and rustic feel to it. There aren't any big modern monstrous hotels, generally just small family run guesthouses albeit ... read more

So there's a big beak bite on my back. I can barely see it in the mirror, but I feel its presence and the infection is affecting my entire body. Every time I retell the story, I feel the weight of the turtle concentrated on that beak mark. Every time I reenact the attack, my spine shivers with the twisting. This is an interesting injury, because it seems to be affecting my entire body - including my mind. So after the attack, I stayed on the cayes for two more nights to finish the project with my team. The pain would come and go, but was increasing each day. By the time we returned to Placencia on Wednesday afternoon, my friend Rita said the bite was black and yellow and "Not lookin good, gal." I went ... read more

I know I've been publishing past adventures, but this one is actually current! Miss you all! If you took New Years, Christmas, and the 4th of July and put them all in one month, you’d have September Celebrations in Belize! What a wonderful time to be home on the peninsula….it’s slow season so the faces are all familiar and our favorite restaurants take turns closing for weeks, BUT there are many holidays and things to celebrate! We’ve got St. George’s Caye Day, Independence Day, and our very own Placencia Assassins football team took the national championship last month! I just got back 30 days ago, but of course it feels like I never left…. My first order of business in Placencia was to get underwater, despite the recent news of terrible visibility due to an unusual ... read more
