"Vietnam is the land of heat and noodles". That is what an American friend wrote to me in an email when he said he missed Vietnam. While in English, there may be only some words "noodles", "vermicelli" or "noodle soup", in Vietnamese, we have various names "Phở, Bún, Miến, Bánh đa, Bánh canh, Mỳ" to describe our noodles. This beef noodle soup has its origin from Huế city in central Vietnam, but it's also sold in Hanoi.

Now I have a glass of sweet soup after mixing all material in previous photo. The white liquid is of coconut.

Inside the round rice cake "Bánh chay", there is green bean. On 3 March of Vietnamese lunar calendar, we eat this cake and one more cake "Bánh trôi".

There are many types of "Phở xào" (fried noodles). For example, "Phở xào bò" (fried beef noodles), "Phở xào hải sản" (fried seafood noodles). The noodles in this photo are "Phở xào tim" (fried noodles with pig heart, vegetables and tomato).

The cake is made in pillow shapes, inside which there are pork, clear noodle and mushroom. It is eaten with sauce and vegetables.

These noodles are famous in Hải Phòng city (northern Vietnam) and also sold in Hanoi.

Fried tofu to eat with Bún noodles and Mắm tôm (shrimp sauce).

This is our traditional cake that we eat during Tết (Vietnamese lunar new year), but we also eat it anytime we want. The cake has a square shape and contains sticky rice, green bean and pork. It's very delicious when it's fried, and we eat this fried cake with soya sauce.

Two sticky rice cakes with green bean and black sesame inside them. Hot soup with peanuts and ginger or coconut.

Cốm (green rice or young rice) is often eaten with banana. The best time for this green rice is September. This green rice can be made into sweet soup (Chè cốm) or green rice cake (Bánh cốm - see the next photo). We use a lotus leaf to cover this green rice.

Inside this cake is sweet green bean. This cake is one of the offerings that groom's family brings to bride's family at their engagement ceremony.

Noodle Variety!!
It sounds like you had a great time at this restaurant. I think it's really interesting to hear the variety of different types of noodles they have. Considering rice and noodles are their main types of food they eat for their meals, they are able to create a multitude of dishes by creating different combinations of chicken, beef, etc. The selection of the size of noodles sound incredible! This makes me want to go out for some Vietnamese noodle soup right now!

Restaurants in Hanoi names Please!
Fabulous Blog! Vietnamese food is the BEST in the world! I would love to hear of some names and addresses (Or therabouts) of some of the places you have used for these photos. I have been there before but its been 6 years and this trip is going to be a bit different. Cha Ca La Vong
Ate this signature dish, Cha Ca La Vong, at the restaurant of the same name, on La Vong Street in Hanoi. The best meal in the north or the south. Same location since the early days of Indochine; same family runs it; and the dish is legendary. White fish cooked at your table in a stone bowl of hot, seasoned oil, and add fresh vegetables and noodles. Don't miss it!

Ha Noi Cuisine
I like Ha Noi cuisine, special "Phở gà (chicken)". You can find it in every streets, but I think "Phở Thìn, Phở Bát Đàn, Phở Lý Quốc Sư" are the best. If you like Steamed Rolled Rice Pancake, Ba Hoanh Steamed Rolled Rice Pancake or Thanh Tri Steamed Rolled Rice Pancake is the best choice. Dried Beef Salad in Bo Ho is the best. You know, they are quiet cheap ($1 - $2) and easy to find them. Come and enjoy!
