We were collected by pickup & driven to the local market. Our teachers for the day were Noki, Ma & Meow & they set about showing us all the Thai herbs & vegetables we would be using. We had all piled round one market stall & no one else had a chance to buy anything from it, so I'm sure the stallholder was pleased when we moved onto the curry pastes. Having got what we needed for the day we headed out into the countryside to the Pad Thai Cookery School. At the school we sat down on floor cushions at a long low table & were given our recipe books, aprons, tea towels & stickers with our names in Thai. Today is Dec 15, 2005 (Thursday) We arrived in Sukhothai on Dec 11. On Dec 12, we took a walking tour of the old city of Sukhotai and saw a lot of ruins. Sukhotai Historical Park is a UNESCO site. Lots of wats (temples) from the Sukhothai period. Some are very impressive. We visited only the big wats within the old city wall on foot, and took about 400 photos. 4 Nights Oh Pai, why were you so good to us? If you are ever in Chaing Mai you must see Pai. The guidebook said this hippy town sprouted like a mushroom when travellers were on there way to somewhere and they found Pai. We took the latest bus (always arranging things at the last minute) on a Saturday at 3pm (asking for trouble) and when we arrived at 7pm we were greeted with a town abuzz with Thai and Farang tourists everywhere. I was a little disappointed as I had the impression that Pai was a 300 metre street with 5 or so guesthouses (so naive) and that we may come across a few other travellers why we were there, how wrong was I. What a day...14 hours of touring the Northern most region of Thailand. I joined a few other travelers and drove to the northern point of Thailand where it meets with Laos and Burma and is called the Golden Triangle. It got it's name from the furious optium trade back in the day where the currency wasn't dependable so Gold was the only way to properly buy the drug in large quantity. Today it's a tourist attraction where 3 cultures diverge into one and on the Thailand and Burma side, there are markets galore. We took a very short boat ride up the river into Burma, then stopped over into Laos and did alittle shopping. The boarder patrol allows this if only a very short visit and Baht 20 transfer fee (for what, I have no idea). ... read more

Today is Dec 12, 2005. Christmas is just less than two weeks away ! Boy, time flies. We left NongKhai on Dec 11 at 6 am. It took 3 buses and about 10 hours to reach Sukhothai. The buses were from NongKhai to Udon Thani (35B each, about 1 hour), from Udon Thani to Phitsanulok (202B each, about 6.5 hrs), from Phitsanulok to (New) Sukhothai (37B each, about 1 hour). The roads in Thailand are very good. The roads we travelled were small routes, and they are comparable to secondary highways in Canada. Which is already way better than the major routes (not the super toll road) in China. Another great day in and around Chiang Mai. I rented a motorcycle and decided to drive out to a temple called Wat Rampeong to learn meditation from some English speaking monks. The motorcycle rental costs $3.50 for 24 hours....cheaper than the whole pizza and beer I had for dinner tonight (that was $4.00). Wat Rampeong is about 25 miles out from the city of Chiang Mai but pretty much a straight shot and easy traveling roads. On the way there I kept thinking about meditation and what I'd be asking the teacher and thought, I should stop for a bit of lunch before I arrive. Wow....Chiang Mai thus far has been everything I hoped it would. I took the 2 day trek (up hill) through the jungle of Northern Thailand. The weather couldn't be better....sunny, no rain, not too hot. Our first stop was an elephant farm to take a one hour ride on elephants. These were the most tame creatures I could ever have imagined. We then stopped at a waterfall to take a swim and unfortunately I slipped on a rock and gashed my leg open, other than that, the water was refreshing. There are 7 of us including two guides. Everyone is from some place else, i.e., UK, Norway, Japan and the U.S.. Luckily we all speak English. We ended up in a Hillside Tribe with a population of about 30. I made it to Chiang Mai this afternoon, checked into the hotel, and hoofed it around town. Chiang Mai is more of a resort type town than Bangkok....more intimate, with lush green mountain jungle surrounding the city. This also the place where if you want to get up early, you can get out in the street with rice or water or fruit or candy and wait for the monks to come by. All their daily rations are from food donated by the towns people. In exchange they bless you with good luck. There's also a night market here that's basically more cheap street food under lights. 5 Nights OK, mental note, when booking a bus trip, make sure it has VIP in the name and that it looks good in the picture they show you, and if it is only AU$7 for a 12 hour bus ride ask why. It was the bus trip from hell, Bangkok to Chang Mai. Picture this, an old shitty bus, the aircon sort of works, you can hear and smell the toilet from your seat, no movies, a psycho host who tells anyone who dares to ask a question to shut up and sit down, you have to beg for a blanket and a bus driver who weaves in and out of traffic, nearly rolls the bus 1000 times and talks and texts on his mobile phone whilst 50 shit scared backpackers try to get some ... read more

Another week has flown by here in Chiang Mai. We thought we would update you all before we head off to Laos via the slow boat. We will head up to a place called Chiang Rai and then to the border where we will board a boat on the Mekong River down through Laos to Luang Prebang. Last Thursday was Nick's 27th birthday which was kicked off with the best present any traveller could want: toilet paper and M&Ms. In the massage class everyone sang happy birthday and in the evening we went out for a very nice and fancy dinner at a restaurant called "The House".
