Xichang, Sichuan, China (May 17, 2019) - As is customary, the host hospital staff (ophthalmologists) organize a welcome dinner. This evening we were treated to a mushroom hotpot - featuring a boiling cauldron of bullion soup filled with a dozen varieties of mushrooms of all kinds of textures, sizes and flavors. A real delicacy, it include an abundant number of exotic truffle mushrooms that were incredible. Of course included were steamed buns stuffed with mushrooms.

The HourglassThe hourglass with blue sand in the background timed the boil to let us know when to dig in. It tried our patience a bit - several times we checked to make sure the sand was flowing.
