OK, so no business with my friend in Chengdu without trying the real thing!
HUO GUO - hot pot
Best ones come from this area, although the most praised hotpot is from ChongQing. Chengdu however has it's own version (they have their own version on everything, I suppose) that is putting pieces of food into the pot by using long wooden sticks. To me it looks even more photogenic. Also the mixtures of spice that's put in to the boiling broth is different but the base is the same: HOT!
We went twice...in two days. Not bad for a tourist. There are supposed to be some hard core huoguo lovers, who are able to have it in the morning...
some rookie tips:
-choose to boil the food that you know and really like to eat it
-never take grean leafed items to put into the broth....the surface is covered with oil...that will stick to the bigger surfaces...that can cause a problem...believe me...I tried it some time ago and had burned my throat
-it's OK to ask for an extra bowl...where you let the things you take out of the broth drip the extra oil into...otherwise you little cup
where you keep a special sauce will get filled with oil in first half hour
-help yourself! ....cold beer anyone?
-it's OK to take breaks of time to relax between the rounds...you'll spend hours there...so just relax and take it easy
As my friend said: No Chengdu without a HuoGuo!
