Preparing Pineapple
DAY 4 - Tuesday

Well this is delicious! If you want some of the best dried jackfruit, papaya, pineapple or banana on the planet, you will have to get it from it’s only buyer who is based in Germany. That is what we learned at Karagwe ‘s food processing factory just a short distance from KARUCO.

About 300 farm families supply fruit to the plant and another 30 work in food processing. One third of those are women. Our tour brought us through the steps of taking harvested fruit, scrubbing, coring and slicing, drying (18 hours) and packaging. The plant is OSHA certified and everything is organic. Like most tours, the end included a plate of product: In our Case, dried pineapple. Hands down the best I’ve ever eaten.

Rural Opportunity Centers (ROCs) could connect to processing plants as one aspect of improving family and community incomes. Exploratory stage so too early to decide. But a tour well worth it. And our tastebuds are satisfied.
