Dingle

An Irish Blessing

May the road rise up to meet you,

May the wind be at your back,

May the sun shine warm upon your face,

May the rain fall soft upon your fields,

And until we meet again,

May God hold you in the palm of His hand.

These words whirled around my head all of yesterday as Adam, Kaitlin, and I biked the 20-mile Dingle penninsula. You see a lot more on two wheels and get to take it at your own pace. We brought chicken and bread to make sandwiches and just as I was about to keel over off of the cliffside from exhaustion, we stopped and had lunch on a gorgeous beach. On the loop back to Dingle, Kaitlin pointed out an old Celtic building that had been made only of stones--with no mortar, wood, or nails. Just stones stacked on top of each other. Amazing.
I made potato soup for dinner (I felt so Irish peeling potatoes for dinner!) One great thing about this trip is that we are experimenting with cooking almost on a daily basis. Adam has made curry 3 times, Ive

Loved boots

The man who rented us bikes is also a shoe cobbler and couldnt let his old boots go. So he painted them, put flowers inside, and hung them on the street!

cooked a blackberry cobbler from scratch, and now potato soup...Ive decided we dont eat like backpackers. We eat very well. 😊

Today we took a bus from Dingle to Cork. The three of us wandered around the city (getting hopelessly lost) until we asked a girl walking her dog for directions. Unfortunately, we re-covered the same ground, but found ourselves at a local diner. After ordering the KING BURGER (guess who got that) and an egg burger, we befriended the short-order cook. He told us about Cork, warned us about Dublin (too late, buddy) and asked about America. As we were leaving, he invited us to a local pub. Cork...
