For getting to know a little more original and open minded culture, I can highly recommend Guatemala! If you are looking for a quiete, safe, and original place dealing with the ancient Mayan culture but also with the modern life, have a look at Flores, Peten! I went to the language school (Dos Mundos)at this place, received one to one classes (20 h/week) by well educated teachers for quiete low prices and also got the opportunity to participate in various volunteer activities. I also was looking for homestay families and had a great experience living in an appartment with a Guatemaltekan family which also hosted some Guatemaltekan students, but no other tourists.It is not a big party location, but its a very familiar atmosphere there with people always willing to spend time with you at the afternoons and evenings. Even though I am a woman travelling alone, I felt totally secure at this place: the crime rate in FLores is óne of the lowest in Guatemala. I could imagine that this might be what you are looking for.
