I highly recommend you check this beautiful estate in the countryside, Il Borro, that has villas and furnished farmhouses. In the hills above Florence there's a little town called Fiesole (take then #9 bus from the main train station) that has Roman ruins and beautiful smaller churches, for when the grand cathedrals start to make you feel too small. This hotel is the most original and wonderful that I've ever seen, is also very close to many towns to visit such as Pienza, for me the most beautiful!
