Ponce
The castle is in Ponce. It is at the top of the hill there overlooking the Carribean. It is beautiful. There is a tour of the inside of it which we did not take.

Did you visit Hotel Guanica, a parador outside Ponce?
Do you think that a family of gringos who speak Spanish and love adventure could move to the area surrounding Ponce? Maybe for 5-8 months/year? Could we find work at the local universities? Thanks for your reply!

No we didn't visit that Parador. We stayed in San Juan in the Condado area and rented a car to drive all over the island. Ponce is beautiful but we found it to be mostly locals. There is a lot of industry and jobs around the San Juan area. San Juan is only a 2 hour drive from Ponce (if you take the right highway). If you are looking to relocate I would start in San Juan and then look at Ponce... Hope that helps!
