We celebrated the opening of our hotel last week. We had our first guests and everything went better than I could have ever imagined. Rachel’s food was spectacular, although it is clear that she’ll need help in the kitchen which I can offer now, and we’ll hire someone to do so in the future. All of the rooms and bathrooms were completely finished and considering what many of the hotels look like here, I am sure that our guests were pleasantly surprised.
The first night that our guests were here, we stayed up after dinner playing pictionary. The following day I led a tour to La Paz and Poas, which took up a good portion of the day. Our guests decided to stay a little while longer to stay for an optional dinner that they purchased, I guess that’s a testament to how amazing of a cook Rachel has become. (My new belly is a testament to that as well :) )
The pool is now finished and is really a work of art (pics to come later today). We thought we would have something simple, but our contractors really pulled through and made this waterfall and paths, incorporating palms and plants, and even used the tiles to create an orchid in the bottom of the pool. They really made it so nice that we could never have foreseen the outcome when we started the project.
One more day and the contractors will be finished, and we will be on our own!!!
This has been a vision for a year. Research for 9 months, work for 6 months, and construction for 3 months, but now when we look around what we have created, it’s clear that it was worth it.

It's so exciting that everything has come together so beautifully - I can't wait to see the finished product!
BTW - Rachel was always a great cook - now, I guess, she's even better!
Anyone out there - you haven't lived until you've had her homemade bagels fresh from the oven!
