Trips up rivers, through jungles up mountiains are great and exploring just as much so . But I love food, local food, and I am not really into restaurants , they are expensive directed at tourists and the food is not always the best plus you got to sort of look clean and tidy to go in.

I love street food cooked and eaten by peasents ( sorry to the peasents for saying peasents).Cheap , lots off it and cooked by real experts . Someone in Bali told me why it tastes so good . They say that these guys , al they do all their lives day in day out is cook the same dish and flog it on the streets , this recipe gets passed down generation to generation , always the same ( bit monotonous I guess ) and if it dont taste good the peasents wont eat it and then they dont earn their money,so it obviously tastes good. Just forget all we have been taught about hygiene and food control and switch off. You see a guy with filthy hands and long dirty minging finger nails throwing meat that is covered in flies in 35°

sunshine into a homemade wok and you just dont care because you know it will taste amazing !

But in Vietnam , it seemd nearly impossible to find these little gems untill I met Mr. Tung do. Tung runs a HCM tour of a different kind . He has or had( since he tells me he has expaneded now) then about 15 motorbike guides who pick you up from your hotel , meet up with some other tourists and Tung and drive at night time around HCM to the little hidden away food stalls .For a fistfull of Dollars ( not much ) you get to eat and drink for around 3 hours or so if I remember rightly , it may even be longer.But these food stalls are really only known to the informed, it was like a different city , just driving down some little backstreets opened up a whole new HCM.

And the food was amazing ( except for the Balu egg which is like a duck embryo just about to hatch then killed and fermented before being eaten , puke puke ! ) and the motorbike girls who drove us were a geat laugh

and very good drivers .HCM is just amass with mopeds it is so amazing to see so many bike on the roads , a total enviromental nightmare but a great experience. So there we are , pissed going around HCM on these bike darting from food stall to food stall . XO tours & Tung Do I salute you ! Tung remained a freind to this day , a really nice guy.
