At The MarketClass begins with a tour of the local fresh foods market where we learn about herbs, rices and other essential ingredients.
Thai Cooking Class As this trip winds to a close, we realize that there are a number of things that we really wanted to do or see, but they will have to wait for another trip (yes, a 3rd trip to Thailand is likely in our future). Simon wanted to do a meditation retreat at a Thai Wat. Tamra wanted to explore a National park to observe unique wildlife.
But today we did get to check something off our list...Thai Cooking! And what fun it was. Neither of us have ever taken a cooking class before so had no idea how enjoyable it could be. Perhaps it's because all the students are on holiday, or perhaps it's because our teacher fancies himself as the Jay Leno of Thailand, or maybe learning to cook and eating your test results is always a blast - in anycase, we recommend it big time.
We made green curry, hot & sour soup, spring rolls, pad thai, sticky rice with mango, papaya salad (all the classic thai dishes) and learned that once you know the basic sauce - you can make any stir fry, fried rice, soup or curry. Our home diet is

We enjoyed our fellow students as much as the food - as usual, no other americans but plenty from NZ, Australia, UK. Home after the day long class we are now too full to do anything else...guess we'll have to rest.
Our comedian/chef Suriyan leaves us with this lesson:
If you've used too much fish sauce, balance by adding lime or vinagar.
If you've used too much curry paste, balance by adding sugar.
If too many guests show up, just add more chili paste.

It's so fun to hear from you and be a part of your trip (albeit it from this vicarious and ever so jealous vantage). Having spent time in Thailand, I can well imagine what your new Jay Leno friend is like. Meeting delightful and colorful characters, always makes for such a memorable and fun trip. Sounds like yours is off the chart! I like the idea of a 3rd trip sometime in your future. I was hoping you weren't done with that part of the world, just in case the stars ever lined up enough so we could meet up with you there sometime again.
