I was collected first thing ready for my Thai cooking course! There were 10 of us today - 5 French, 2 Aussies on their way home from 3 years in London, an English/ South African couple from Edinburgh and me!!
Our first stop was the market to buy the produce needed for our day. We made 6 dishes and mine were Thai Green Curry Paste, Thai Green Curry, Tom Yam soup (with Shrimp!), Chicken and Cashew Nut stir fry, Pad Thai and Mango with Sticky Rice! It was great!!! Our instructor took us on a guided tour of the market, explaining how to choose the produce and describing the many different types of rice and how to cook them.
The course was at an organic farm and they had all the herbs etc growing in the garden. We learned about all the ingredients and how they are grown before we started and then headed into the kitchen.
We made the curry paste from scratch with a pestle and mortar and then built it up into a full chicken curry. Mine, it turns out, was bloody hot (but yummy!)! We made the soup straight after (which I wasn't a
huge fan of, but that might have been my cooking!! Lol!) and then the chicken and cashew nuts which was lovely! It was time for lunch and our instructor showed us how to eat the dishes. Jasmine rice with the stir fry and sticky rice with the curry. You needed asbestos hands as the idea is to pick up a lump of hot sticky rice, roll it around in your hand to form a ball and then dip it in your curry! We got in such a mess!!
Back into the kitchen to make the mango and sticky rice (with coconut cream this time as it was for desert!) which was delicious and real comfort food! It had a hint of rice pudding about it! The Pad Thai came next but we were all too full to be able to eat it so it was bagged up for us to bring home for tea!
We got a cook book with all the recipes that were available for us to choose from so I have some more dishes to learn when I finally get myself in a kitchen again!! I had a great day and I'm really glad I
took the course!!

Hi, enjoy reading your journal. The weird pink fruit on the picture is Dragon Fruit. It's really, really nice. You eat the inside. Most of the time it's white with little black seeds in it (you can eat it all) and sometimes it's pick/purple inside.
Very refreshing asian fruit.
