Day 9 Professional Thai Cooking

Wa Pri means “Head of Banana”

Yummy. Added to my top faves

Ingredients:

(1/6) 82 g of a Banana Blossom

17g shallots

16 g Galangel ginger

3 long stacks (22 gr) of lemongrass (smash and tie in a knot for easy removal before serving)

3 kaffir lime leaves (split in half)

1 (2g) Coriander Root

2 Deep fried small chilli Dry

2 (2g) thai chillies (small and hot)

¼ cup (65 g) Chicken tigh no skin and cut in small squares

1 cup (100 g) of Coconut Cream





Preparation:

Cut the Banana Blossom (Flower) in half and cover it in white vinegar so it doesn’t change color put aside

In a pot boil

1 ½ Cup of Chicken Stock, lemongrass, shallots and coriander root. Once is boiling add the chicken. When it changes color to white slice the banana blossom and drop it in the boiling broth. Add coconut cream

Turn heat down and add seasonings to taste.



Seasonings:

1 T fish sauce

1 Lime Juice



Taste and adjust



Turn off heat, remove lemongrass knot add chillies, serve and garnish.
