In English it is Lotus Root. I am not sure if it is a veggie or not but I use it as a vegetable and often use it when I am making chicken and veggies. It is really beautiful and crunchy and doesn't have much of a flavor on its own.

This stuff is as weird as it looks. Its made from a potatoe and has a jelly like consistency and texture. It also does not have much of a flavor on its own but it is supposedly really healthy for you...really high in fiber and helps to stabalize blood sugar :).
